Whip the egg whites with the sugar until they form a very stiff meringue. Put the stewed apples into the hole in the cored apples and top with the meringue.
Steam for 15 minutes with the starter and the main course. Meanwhile, mix the passion fruit seeds with the sugar, water and cinnamon. Bring to the boil and allow to cool.
When the apple meringues have finished cooking, serve with the passion fruit sauce.
