Ingredients

  • 4 yellow peaches
  • 1 punnet raspberries
  • 100 gm pistachios
  • 100 gm caster sugar
  • 100 gm double cream
  • 50 ml vanilla bean Crème Anglaise

Preparation

Place 100 gm of caster sugar in Tefal Reserve Collection 26 cm fry pan and place on medium heat. When sugar is caramel colour add pistachios, stir together, remove from pan and place on baking paper. Once cold chop the pistachios and set aside.

Place the double cream in a bowl and fold through crème anglaise. When thickened, place in fridge until serving.

Place Tefal Reserve Collection Grill Pan on medium heat. Cut the peach in half and remove the stone. When the Thermospot is red place peach downside and allow to grill leave for 2 minutes then turn to createcross pattern. Turn over and leave for 2 minutes. Remove from pan and place on platter. Quenelle cream across peaches, sprinkle with pistachios and raspberries, serve while peaches are warm.
