Ingredients

  • 1 carrot, cut in sticks
  • 1 courgette, cut in sticks
  • 2 leeks, white part only, cut into sticks
  • 100 g red pepper, cut into sticks
  • 100 g yellow pepper, cut into sticks
  • 100 g tomato passata or creamed tomatoes
  • 1 tablespoon olive oil
  • 1 tablespoon pine nuts, toasted
  • 2 slices lean ham (optional)
  • Cherry tomatoes (optional)
  • Salt and pepper

Preparation

Steam the vegetable sticks for 15 minutes. Allow to cool.

Mix the remaining ingredients, except for the pine nuts, with the vegetable sticks. If desired, add ham.

Present the salad in a shallow bowl, sprinkled with toasted pine nuts and decorate with cherry tomatoes if desired.
