Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 red capsicum, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • ¼ tsp chilli powder
  • 1 can diced tomatoes
  • 6 large eggs
  • Crumbed feta cheese
  • Chopped coriander, to garnish
  • Salt and pepper, to taste
  • Crusty bread slices, to serve

1. Bring the Ingenio frypan up to temperature on your stove top until the Thermospot turns dark red. Add olive oil, onions and capsicum and saute until golden about 3-4 minutes. Add the garlic, cumin, chilli powder and season with salt and pepper. Add the diced tomatoes and stir until the tomatoes have thickened about 10 minutes.

2. Make 6 little spaces for the eggs and crack the 6 eggs in the frypan over the tomatoes. Sprinkle with crumbed feta and transfer (using the detachable Ingenio handle) from stovetop to 180-degree Celsius oven and bake for about 10 minutes.

3. Using the handle again, transfer from oven to tabletop and sprinkle with coriander. Serve with crusty, toasted bread.
