Place the Whisk attachment into the Cuisine Companion and add the eggs yolks, half the sugar, cornflour and vanilla. Set to speed 6 and whisk for 1 minute. At 30 seconds of whisking add the milk and cream to mix through.
Now cook the custard by setting the Cuisine Companion to speed 4 at 85C for 12 minutes. Remove custard and portion into decorative glasses.
Clean the bowl and reattached the Whisk. Add the egg whites and remaining sugar. Lock the lid and set at speed 7 on 70C for 7 minutes (without the stopper) until stick peaks form.
Serve scoops of fluffy meringue onto custard and garnish with berries and pistachio.
