Ingredients

  • 370 g of fine grain semolina (placed in a salad bowl, salted)
  • 6 tablespoons of olive oil
  • 3 carrot(s) peeled and cut into chunks
  • 3 zucchini(s) washed and cut into chunks
  • 400 g of chickpeas cooked in the Cookeo, soaked for 12h, immersion 13min
  • 3 vegetarian sausage(s)
  • 6 extra fresh, washed eggs
  • 1200 ml of vegetable stock
  • 1.5 teaspoons of couscous spices
  • Salt and pepper

Preparation

This hearty meatless Monday dish ticks all the nutritional boxes with a range of vegetables, plant proteins and wholesome carbohydrates. Couscous, made from semolina, naturally contains some calcium, magnesium, iron and zinc, as well as some of the B vitamins and vitamin E.

Prepare the ingredients.

Make a small hole in the curved part of the eggs.

Heat the oil in the pan. Pour it over the semolina (in a salad bowl). Mix.

Place the vegetables, sausages, stock, chick peas, & spices in the pan. Salt, pepper, mix. Put in the eggs (do not peel).

Cooking time : 7 minutes

Remove eggs from the bowl, then peel and cut in half.

Add cooking stock mixture to the semolina. Cover and wait 5 min. Top with the hard boiled eggs and serve.
