Ingredients

  • 7/8 cup cream cheese (200g)
  • ½ cup cottage cheese (125g)
  • ½ cup sour cream (100g)
  • 3 eggs
  • 1/3 cup brown sugar (85g)
  • 1 cup fresh blueberries (250g)
  • For the biscuit base
  • 1 cup flour (140g)
  • ½ cup sugar (100g)
  • 1/3 cup soft butter (80g)
  • 2 tablespoons milk

Preparation

To make the biscuit base: Mix flour and caster sugar in a bowl, add the cold butter in pieces and crumble until it resembles fine breadcrumbs with your fingertips. Add the milk to get a pastry, then spread it in the buttered Snack&Baking tray accessory.

Place the Snack&Baking tray accessory with the biscuit base inside in your OptiGrill before turning it on. Turn the grill on. Select the manual mode and select yellow color setting. Cook for 15 minutes.

To make the cheesecake filling: In a bowl, whisk the cream cheese with the sour cream, cottage cheese and brown sugar. Add the eggs one by one. Pour this mixture over the biscuit base and divide the blueberries on top. Bake 45 minutes.
