Ingredients

  • 1 1/2 tbsp of olive oil
  • 4 French-trimmed lamb shanks, 8 oz (250 g) each
  • 1 onion, chopped
  • 2 carrot, diced
  • 3 stalks of celery, diced
  • 1 1/3 cups of canned diced tomatoes with herbs
  • salt and black pepper

Preparation

Prepare the ingredients.

Preheat pot. Add oil. Season shanks with salt and pepper.

Brown shanks on all sides.

Add remaining ingredients. Stir well to combine.

Cooking under pressure : 40 min.

Season with additional salt and pepper to taste.
