Ingredients

  • 175 g PLAIN FLOUR
  • 100 g GRUYERE CHEESE, RINDLESS OR PARMIGIANO REGGIANO OR EMMENTAL CHEESE
  • 90 g SOFT BUTTER
  • 1 EGG, BEATEN
  • 1 TBSP OLIVE OIL
  • 1 TSP PAPRIKA
  • 1 TSP CUMIN SEEDS (OPTIONAL)

Preparation

Preheat the oven to 180°C/fan 160°C/ Gas 4.

Cut the cheese into 2 cm cubes and place in the food processor fitted with the kneading/grinding tool and chop at speed 12 for 30 s. Add all the other ingredients and mix at speed 10 for 40 s. Wrap the mixture in cling film to form a roll 5 cm in diameter.

Leave to chill in the fridge for 1 hr. Line baking trays with baking parchment. Cut the roll into 5 cm thick slices to obtain the biscuits. Place on the tray.

Bake for 15 to 20 mins. Serve warm or cold with an aperitif.

TIP The biscuits will keep for several days in a sealed box.
