1. Combine the chia seeds with the almond milk in a bowl, and let stand for 15 minutes.
2. Add the cinnamon, brown sugar and vanilla extract, and mix well.
3. Heat a bit of coconut oil in your TEFAL frying pan.
4. Soak each slice of bread in the chia seed milk for 30 seconds, then add them to the pan.
5. Cook for 5-6 minutes on each side, adding more coconut oil to the pan, if necessary.
Tip: If you have leftover chia seed milk, add some oatmeal and fresh fruit to it for a healthy breakfast or snack.
