Ingredients

  • 1 1/2 lbs boneless skinless chicken breast
  • 1 medium onion
  • 3 cloves garlic
  • 2 Tbsp olive oil
  • 1 medium red bell pepper
  • 1 1/2 cups sliced mushrooms
  • 1/2 cup chicken broth
  • 3 Tbsp all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp crushed red pepper flakes
  • 1 (28 oz) can petite diced tomates
  • 1/2 cup sliced pitted green olives
  • 3 Tbsp tomato paste
  • 2 tsp dried Italian seasoning
  • Fresh basil

Preparation

1 Cut the chicken in 11/2-inch pieces. Peel the onion and garlic; quarter the onion and red pepper.

2. Place onion and garlic in the bowl fitted with the ultrablade knife. Launch at speed 12 for 30 seconds. Replace the ultrablade knife with the mixer. Scrape down the sides of the bowl.

3. Add olive oil and launch the P1 simmer program at 270°F for 8 minutes. After 5 minutes, add the bell pepper and mushrooms and continue to cook the remaining 3 minutes.

4. In a small bowl, mix the broth, flour, salt and pepper flakes. Add the broth mixture, chicken and remaining ingredients, except basil, to the bowl. Launch the P2 simmer program at 200°F for 30 minutes. Garnish with fresh basil before serving.

Tip: Serve over cooked noodles or your favorite pasta.
