Ingredients

  • 500 g chicken thighs or breast
  • 1 tbsp olive oil
  • Salt
  • Pepper
  • 1 chopped onion
  • 1 diced apple
  • 2 diced tomatoes
  • 3 tsp curry powder
  • 300 ml coconut cream
  • 1 tsp grated ginger
  • 3 tsp chopped coriander

Preparation

Brown the chicken for 5 minutes on high heat. Add chopped onions and diced apple to the pan with salt and pepper. Continue frying for another 5 minutes.

Add diced tomatoes, curry powder, coconut cream, grated ginger and chopped coriander. Leave to simmer for 5-7 mins until sauce reduces.

Serve with rice and fresh chopped coriander.
