  • 1 lb of boneless chicken breast, thinly sliced
  • 2/3 cup of coconut milk
  • 1/3 cup of soy sauce
  • 2 tbsp of honey
  • 1/3 tbsp peanut butter
  • 1 tbsp of curry powder
  • 1 tbsp of grated fresh ginger
  • 2 cups of water
  • 3 cups of baby spinach leaves
  • 2 tbsp of chopped peanuts for garnish


Prepare the inredients.

Add all ingredients except chicken and spinach. Preheat pot, bringing sauce to a simmer, and stir.

Add chicken slices stirring to coat evenly in sauce. Press all chicken under sauce to submerge.

Cooking under pressure : 6 min.

Place spinach on serving plates; top with chicken and sauce. Garnish with peanuts.
