Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1/2 tsp salt
  • 1/4 tsp ground cumin
  • 1/4 tsp ground ginger
  • 1/4 tsp pepper
  • 1 Tbsp peanut oil
  • Sauce
  • 1/3 cup fresh lime juice
  • 1/3 cup peanut butter
  • 3 Tbsp hoisin sauce
  • 1 clove garlic
  • 1 tsp chopped fresh ginger
  • 1/8 tsp cayenne pepper

Preparation

1. Soak 16 wooden skewers in water for 30 minutes. Cut the chicken breasts into thin strips.

2. Thread the chicken strips onto the soaked skewers. Mix together the salt, cumin, ground ginger and pepper in a small bowl. Brush the chicken strips with peanut oil and sprinkle the spice mixture on both sides.

3. Broil or grill for 2 minutes, turn over and continue cooking for 1-2 more minutes or until thoroughly cooked.

4. Peel the garlic; chop the garlic and ginger. Place all sauce ingredients in the bowl fitted with the ultrablade knife. Mix at speed 10 for 1 minute. Serve sauce with the chicken skewers.
