Separate the egg yolk from the white. Place the egg white in a large bowl and the yolk in a cup.
Whisk the egg white until stiff peaks form and add some of the chopped chives.
In a frying pan, add a few drops of olive oil and place a piece of baking paper in the center. Add a few drops of olive oil on top of it. Turn the heat to medium.
Pour the whipped egg white onto the baking paper so that it forms a cloud shape. Make a small well in the middle and cook over low heat for 3 to 4 minutes. Carefully add the egg yolk into the well. Continue cooking over low heat for about 3 minutes. Season with salt and serve hot.
Tip: Feel free to add a little grated parmesan to your egg white. Sprinkle with chives just before serving.
