Ingredients

  • 2 egg yolks
  • 100 g caster sugar
  • 100 g mascarpone
  • 250 ml very strong coffee

Preparation

Mix the sugar with 2 tablespoons water in a heatproof bowl and steam to melt for about 4 minutes. Beat the egg yolks and whisk in the still warm melted sugar until you get a creamy consistency.
