Ingredients

  • 2x rows of truss tomatoes (8-9 small tomatoes on the vine)
  • 800mL good quality EVVO
  • 3 garlic cloves, crushed
  • 2 sprigs thyme
  • 2 sprigs rosemary
  • 1 tsp salt
  • 1 tsp ground pepper
  • 1 slice sour dough (shallow fried to a crusty brown)
  • 100g ricotta
  • 1 tbsp zaatar

Preparation

1. Using the Flat base attachment, place all the ingredients in the i-Companion XL without the lid. Cook on Manual function at 85C for 40 minutes. 2. Gently remove your tomatoes from the bowl and onto a plate. 3. To serve, place crusty bread on a plate and then top with the aromatic confit tomatoes. Scatter your ricotta cheese. Drizzle with your aromatic oil, and sprinkle with your zaatar and serve.
