1. Place the Parmesan, Romano and Gruyere in the bowl fitted with the ultrablade knife. Mix for 1 minute holding down the Pulse button.
2. Replace the ultrablade knife with the whisk and add the Gorgonzola cheese, egg yolks and cream. Launch the sauce program at 190°F for 6 minutes. At the end of the program, season with salt and pepper.
3. Use sauce with pasta, vegetables or your favorite meat.
