1. Install the kneading blade. Place water, yeast, milk, butter and sugar in the bowl and mix at 40˚, speed 3 for 3 mins. 2. Add flour, salt, nutmeg and cinnamon at speed 3 for 30 second. 3. Add the dried mixed fruit and set it to Pastry Program 1, allowing the 40 mins for the dough to rise. 4. Remove the dough, knead briefly and divide into 12 portions placing them side by side on a lined baking tray (leaving room for expansion). Cover with a dry tea towel and allow the buns to double in size, between 1 - 3 hours. 5. Meanwhile, in a bowl mix the 90g water and flour. Use a piping bag to draw crosses on each bun. 6. Bake for 30 mins in a preheated over at 180˚C or 170˚C fan forced. 7. Meanwhile, mix water and sugar for the glaze to paint the buns when they are done baking while still warm. 8. Allow to cool and enjoy.
