Ingredients

  • 1 1/2 lbs boneless pork loin roast
  • 3 Tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 medium carrots
  • 1 stalk celery
  • 1 cup pearl onions
  • 2 cloves garlic
  • 1 tsp oregano
  • 1 bay leaf
  • 1 1/4 cups chicken broth
  • 3 Tbsp all-purpose flour
  • 1/4 cup water
  • 1 cup fresh or frozen peas or fava beans

Preparation

1. Cut the chicken into 1-inch cubes. Place the meat, oil, salt and pepper into the bowl fitted with the mixer. Launch the P1 simmer program at 270°F for 5 minutes. Peel the carrots, cut in half lengthwise and cut into 2-inch pieces. Cut celery into 1/2-inch slices.

2. Add the onions, carrots, celery, garlic, oregano, bay leaf and chicken broth. Launch the P2 simmer program at 200°F for 1 hour 10 minutes.

3. In a small dish, stir together the flour and water. At the end of the program, add peas or beans and flour mixture. Relaunch the P2 simmer program for 10 minutes.

4. Remove bay leaf and serve immediately.
