1. Peel and roughly chop the potatoes and onion.
2. Place potatoes, onion and water in the bowl fitted with the ultrablade knife. Launch the P1 simmer program for 10 minutes.
3. At the end of the program, add remaining ingredients, except olive oil, and mix at speed 6 for 20 seconds. Bring the mixture to the center using a spatula and mix another 20 seconds at speed 6.
4. Heat olive oil in a skillet over medium-high heat. Using a 1/4-cup measure for each, form the potato mixture into cakes and cook for about 6 minutes per side or until light brown. Repeat with remaining cakes, adding olive oil as needed.
