1. Peel and devein the shrimp. Chop the onions. Place shrimp, green onions, egg white, chives, water chestnuts, soy sauce, rice wine vinegar and oil in the bowl fitted with the ultrablade knife. Mix at speed 12 for 30 seconds.
2. Place 2 tsp. filling in the center of each wonton wrapper. Using a pastry brush dipped in water, brush all four edges of wrapper. Fold all points to the center and seal edges with your fingers.
3. Pour 3 cups of water into the bowl. Place half the wontons in the steam basket lined with parchment paper, they should not be squeezed on top of each other. Place the basket in the Prep&Cook bowl and launch the P1 steam program for 15 minutes.
4. At the end of the program, remove the wontons. Repeat with remaining wontons. Serve with soy sauce or your favorite dipping sauce.
