  • 200 g Basmati rice, rinsed thoroughly in cold water
  • 1.5 Pinch of saffron powder
  • 3 tbsp Indian spice mix
  • 20 g Shelled pistachios
  • 2 tbsp Groundnut oil
  • 200 g Aubergine, washed and cut into small cubes
  • 1 Red onion, peeled and chopped
  • 150 g Green beans, washed and cut into thirds
  • 100 g Frozen green peas
  • 40 g Raisins


Prepare the ingredients.

Pour the oil into the bowl.

Add the spices and the aubergine. Brown for 5 min.Add the onion, green beans, raisins and green peas. Cook for 2 min. Add salt.

Set aside. Add the rice to the pan with twice its weight in water. Add the saffron. Add salt.

Cooking time: 5 minutes.

Add the cooked vegetables and pistachios. Stir. Serve with meat or fish.
