Ingredients

  • 1 tbsp of sunflower oil
  • 250 g of aubergine, diced (2cm)
  • 400 g of canned chopped tomatoes
  • 100 g of red onion, diced (2cm)
  • 2 tbsp of capers, drained
  • 2 tbsp of balsamic vinegar
  • 2 clove of garlic, crushed
  • 2 tsp of dried mixed herbs
  • 2 tbsp of green olives, pitted and halved
  • 8 toast slices

Preparation

Prepare the ingredients.

Add the oil.

Lightly brown the aubergine.

Add the remaining ingredients (except for the toast).

Cooking time: 3 min.

Top the toast with the mixture. Serve and enjoy!
