Ingredients

  • 200 g haricot beans (soaked for 12 hours)
  • 6 large slices of bread, toasted
  • 6 cloves of garlic, peeled
  • 1.5 onions, peeled and thinly sliced
  • 1 bouquet garni
  • 6 tbsp flat-leaf parsley, washed and chopped
  • 1.5 goat's cheese log, sliced
  • 5 tbsp olive oil
  • Salt, pepper

Preparation

We love this high protein twist on the usual bruschetta. The goat’s cheese packs a nutrient punch,rich in essential nutrients like vitamin A, vitamin B, riboflavin, calcium, iron, phosphorus, magnesium and potassium. If you are lactose intolerant, then you might find you are able to tolerate goats’ cheese, as it is lower in lactose than cow’s milk dairy products.

Prepare the ingredients.

Lightly oil then rub the toast with the garlic. Keep to one side. Heat the oil in the pan.

Add the onion and brown it.

Add the beans, the bouquet garni, the parsley and the salt and pepper.

Cooking time: 25 min.

Drain. Mash onto the toast. Add the goat's cheese and grill.
