Ingredients

  • 1 tbsp sunflower oil
  • 1.8 kg whole fresh chicken
  • 150 g leeks, cut into 1.5 cm chunks
  • 125 g cup mushrooms, quartered
  • 150 g smoked bacon lardons
  • 2 garlic cloves
  • 20 g butter
  • 300 ml cider
  • 1 tbsp chopped flat leaf parsley
  • 2 tbsp creme fraiche

Preparation

Prepare the ingredients.

Pre-heat the pot and brush oil on chicken. Brown chicken all over and set aside. Add butter. Brown leeks, mushroom, bacon & garlic.

Place chicken on top of vegetables and bacon. Add cider.

Pressure Cooking Time: 35 mins

Take chicken out of the pot. Season juices and thicken with xanthan gum or glucommanan. Stir in creme fraiche and serve.
