  • 200 g Quinoa, rinsed well (from health food shops)
  • 500 ml Water
  • 100 g Diced cucumber
  • 200 g Halved cherry tomatoes
  • 12 Thinly sliced spring onions
  • 150 g Cubed feta
  • 2 tbsp Chopped fresh mint


You can't beat a fresh salad, especially when it’s topped with some feta and mint for a powerful flavour punch. Place quinoa and water in bowl. Stir well.
