Prepare the ingredients.
Cut the tops off the zucchinis. Scoop out as much flesh as possible (keep the flesh to make soup).
Pour the oil into the bowl. Add the diced vegetables and the spinach. Once cooked, place in a salad bowl. Add in the rice, egg yolk, parmesan cheese and orange zest.
Season zucchini with salt and pepper and fill with the rice and vegetable mixture then put the tops back on. Place them in the steam basket. Put 200ml water in the bowl and then put the steam basket into the bowl.
Cooking time : 8 minutes
Serve. Keep the vegetable juice to make soup.
