Ingredients

  • 6 tbsp rapeseed or sunflower oil
  • 750 g turkey breast strips
  • 360 g quinoa and bulgar wheat mix
  • 700 ml vegetable stock
  • 75 g spring onions, finely sliced
  • 150 g watercress, roughly torn
  • 150 g pomegranate seeds
  • 180 g cashew nuts, lightly toasted
  • 3 avocado(s), diced
  • 3 tbsp of lime juice

Preparation

Prepare the ingredients.

Pre-heat pan and add half of the oil.

Lightly brown the turkey (in batches if required).

Add the grain mix and stock. Stir well to combine.

Pressure Cooking Time: 5 mins.

Stir in the remaining ingredients. Serve and enjoy!
