  • 3 bone marrow
  • 3 tbsp of oil
  • 6 beef fillet steak (tournedos) (170 g to 200 g each)
  • 90 g of shallot, finely chopped
  • 90 g of butter, in small chunks
  • 200 ml of red wine (Bordeaux or Cahors)
  • 150 ml of beef stock
  • 3 level tsp of cornflour, thinned in a little red wine
  • 1 bouquet garni
  • salt, pepper


Scoop the marrow from the bone using a spoon and cut it into chunks.

Pour the oil into the pan.

Brown beef for 2 minutes on each side. Remove. Gently fry shallots in half the butter. Add the wine, beef stock and cornflour.

Mix until boiling. Season. Add the bouquet garni, tournedos and marrow.

Cooking time: 1 min.

Remove the beef, bone and bouquet garni. Add the butter and whisk. Serve!
