  • 500 g Venere black rice
  • 150 g vegetable stock (or salted water)
  • 3 clove(s) garlic, peeled and chopped
  • 750 g vine tomatoes, cut into eight
  • 75 g pitted black olives, chopped
  • 25 salted anchovies, rinsed and chopped
  • 3 tbsp capers in vinegar
  • 3 dashes red chilli paste
  • 1 tbsp parsley, washed and chopped
  • Salt and pepper, to taste
  • Olive oil, to serve


Prepare the ingredients

Put all the ingredients (except the olive oil and parsley) in the pan. Stir well to combine.

Pressure cooking time: 14 mins.

Drain if necessary. Add the parsley and a drizzle of oil.
