Ingredients

  • For the goulasz:
  • 300g ajvar
  • 1kg boneless veal shoulder (or any stewing cuts of beef or pork)
  • 2 Tbsp plain flour
  • 3 Tbsp olive oil
  • 1.5 medium brown onions
  • 2 medium carrots
  • 2 medium cloves garlic
  • 1.5 tsp carraway seeds
  • 200g good quality chopped tomatoes
  • 150ml dry white wine or beer
  • 1 tsp smoked paprika
  • 1 Tbsp sweet paprika
  • 1 litre chicken stock
  • 2 fresh bay leaves
  • 1 sprig thyme
  • chilli flakes, to taste (optional)
  • To finish:
  • ½ bunch continental parsley
  • sour cream
  • To serve:
  • Micro thin Tefal Airfryer chippies
  • fresh rye bread, boiled potatoes, or in true polish style – a potato pancake “placki ziemniaczane”

You can't beat a good stew when you're looking for something warm and satisfying and this classic Polish Goulash served with string fries is made faster than ever thanks to our Smart Cook4me+ Connect pressure cooker and Sammy Jakubiak.

1. Dice the veal shoulder into 1-inch pieces and dust in flour and salt & pepper.

2. Place your Tefal Cook4me onto the browning function. With a little olive oil, seal the meat, in batches, until well browned then keep aside.

3. Finely chop the onions, garlic and carrot. Sweat the onions, garlic, carrots and avjar with a little more olive oil in the Cook4me until translucent and caramelised.

4. Next, add in caraway seeds and continue to cook for 2-3 minutes until fragrant. Deglaze the pot with white wine, making sure to scrape the caramelised bits off the bottom of the pan with a wooden spoon.

5. Add the reserved veal, tomatoes, smoked paprika, sweet paprika, chicken stock, bay leaves and fresh thyme. If needed, top up with water until the meat is just covered.

6. Place the lid on, lock and set to pressure cook for 45 minutes.

7. Serve goulash in a bowl and sprinkle with finely chopped parsley. Accompany with crispy micro fries made in your Tefal Airfryer and add a good dollop of sour cream.
