Prepare the ingredients.
Brown the lardons. Add the vegetables and let them cook for a few minutes. Season with salt and pepper.
Pour the single cream. Stir well to combine.
Pressure cooking time: 6 mins.
Stir through the parmesan cheese. Serve. Optional: Top with raw egg yolk right after cooking and mix through immediately.
Tips: For a smoother sauce, replace the cream with stock during cooking then add a little double cream after cooking.
