  • 6 burger buns
  • 180 g eggplant, diced into small chunks
  • 240 g carrots, peeled and diced
  • 6 button mushrooms, thinly sliced
  • 1.5 onion(s), chopped
  • 1.5 ball of mozzarella, cut into thick slices
  • 150 g canned diced tomatoes
  • 120 ml water
  • Salt and pepper, to taste
  • 3 teaspoons olive oil



Prepare the ingredients.

Pour the oil into the cooking pan. Slice the burger buns in half.

Brown the onion with the oil. Add the eggplant, carrots and mushrooms. Mix.

Pour in the tomatoes and water. Season with salt and pepper and stir well to combine.

Pressure cooking time: 6 minutes

Fill buns with vegetables and a slice of mozzarella. Serve.

Tip: You could add some salad leaves in each burger and a few pickles to taste. Serve with vegetable crisps.
