Ingredients

  • 5g salt
  • 2 whole corn, kernels cut from the cob
  • 2 leeks, finely sliced
  • 1 tbsp ground turmeric
  • 2 tbsp ground coriander
  • 500mL water
  • 1 tsp Vegetable stock powder (or one stock cube)
  • 200mL olive oil
  • 200mL pure cream
  • To serve:
  • ¼ bunch coriander, sliced
  • 1 dollop labne

Preparation

1. Place corn, leek and olive oil in the bowl of the i-Companion XL with the Mixer attachment. On manual function, set to Speed 2 at 120C for 10 minutes. 2. Add turmeric and ground coriander and cook for a further 12mins. 3. Replace Mixer with the Ultrablade knife attachment. Add water, stock powder and cream and blend on for 2 mins at Speed 12. Reduce to Speed 8 and continue cooking on at 130C for 15 minutes. 4. Serve with a dollop of labne, fresh coriander and fresh crusty bread.
