Ingredients

  • 4 zucchinis (that fit in steam basket)
  • 240 g cooked white basmati rice
  • 120 g mushrooms (button, chestnut or wild) cooked
  • 1 tablespoon grated parmesan cheese
  • 1 tablespoon olive oil
  • ½ bunch coriander leaves, chopped
  • 40 g sun-dried tomatoes in oil, diced
  • Fine sea salt and pepper

1. Slice the top off the zucchinis and hollow out the centre

2. Mix the basmati rice, mushrooms, parmesan, olive oil, coriander and diced sun-dried tomatoes. Use this mixture to stuff the zucchinis.

3. Put in the steam basket and steam for 15 minutes.

5. Serve immediately.
