Ingredients

  • 200 g quinoa mix (white and red)
  • 2 cups water
  • Salt
  • ½ pomegranate (seeds only)
  • Chopped coriander / parsley
  • 2 lemons (juice only)
  • 1 tbsp olive oil
  • 50 g dried cranberries
  • ½ diced cucumber
  • 1 diced red onion
  • 80 g squash / sunflower seeds
  • 1 diced avocado

Preparation

Cook the quinoa in a pot in salted water for 10-15 minutes, drain.

Let cool and add the garnish: de-seeded pomegranate, lemon juice, olive oil, dried cranberries, diced cucumber, diced red onion, sunflower seeds.

Refrigerate and when ready to serve, add avocado and toss in the fresh herbs.
