Cook the potatoes in the microwave for 6 minutes or until fork-tender but still firm; cool until easy to handle. Slice each potato into 1/2-inch (1 cm) rounds. Whisk the olive oil with the Italian seasoning, salt and pepper. Brush the oil mixture over both sides of each slice.
Turn the grill on. Select the Manual mode program, select red color setting and press OK. Lightly grease the cooking plates with cooking spray. Once the purple indicator light has stopped flashing, place the potatoes on the grill and close the lid.
Cook for 5 minutes or until tender and well marked. Transfer the potatoes to a shallow serving platter and sprinkle with Parmesan cheese.
