  • 6 medium eggs
  • Tabasco to taste
  • 3 chives chopped
  • 1 garlic clove, peeled and finely chopped
  • 1 Jalapeño seeded and finely chopped
  • 30 ml (2 tbsp) of olive oil
  • 360 gr (12 ounces) strained and washed black beans from a can
  • ½ lime juice
  • 1 unseeded and chopped tomato
  • 120 gr (1 cup) of grated
  • Monterey jack
  • Salt and pepper
  • Sour cream (optional)


In a bowl mix eggs, salt and pepper, Tabasco. Meanwhile in a regular pan cook the chives, the chopped Jalapeño, the garlic with the oil.

Add the black beans and lime, check the seasoning.

Place the empty accessory in the OptiGrill. Turn the grill on. Select the Manual Mode and select orange color setting. When the OptiGrill is bipping pour the eggs in; let cook until mid cook. Dispatch the black beans preparation, the tomato and the cheese. Finish cooking until well cook.

Serve with sour cream.
