Wash the peaches.
Pour the apple juice into the pressure cooker, then add the sugar, cinnamon and vanilla. Add the peaches and close the pressure cooker.
As soon as steam starts to escape, turn down the heat and cook for the time indicated.
Open the pressure cooker. Drain the peaches. Strain the cooking juice, then put in a wide serving dish in the freezer. Allow to freeze, stirring at first. Once the peaches have cooled a little, peel them.
Coat the plates with granita, then place the peaches on top. Garnish with a mint leaf. Serve immediately.
