  • 100 g small spring onions
  • 1 tbsp flour
  • Chopped parsley
  • 50 g butter
  • 4 pike fillets, weighting 120 y each
  • 50 cl red vinegar
  • salt and pepper
  • thyme
  • 1 sugar cube


Put the butter in the pressure cooker, saute the baby onions in, brown them, sprinkle with flour, add the red vinegar, salt, pepper, sugar and 1 pinch thyme. Bring to the boil and boil for 2 minutes, uncovered. Put the seasoned pike fillets in the steam basket, at the high position. Close the pressure cooker.

As soon as steam starts to escape, turn down the heat and cook for the time indicated.

Open the pressure cooker. Arrange the pike fillets on plates and cover with the sauce and garnish. Sprinkle with chopped parsley.

Serve with toasted croutons that have been lightly rubbed with garlic.
