Ingredients

  • 1 cup shiitake mushrooms
  • 4 green onions
  • 1/2 small clove garlic, peeled
  • 1/3 cup water chestnuts
  • 2 tsp peanut oil
  • 1 lb ground pork
  • 2 Tbsp soy sauce
  • 1 Tbsp hoisin sauce
  • 1 Tbsp sweet chili sauce
  • 1/2 tsp sesame oil
  • 8 leaves lettuce

1. Finely chop the mushrooms, onions, garlic and water chestnuts. Place the mushrooms and peanut oil in the bowl with the mixer and launch the P1 simmer program at 270°F for 5 minutes, without the stopper.

2. Add ground pork and launch the P3 simmer program at 200°F for 10 minutes. After 5 minutes, break up any lumps using a wooden spoon and cook for remaining 5 minutes. Drain excess liquid from the pork.

3. Add the onions, water chestnuts, soy sauce, hoisin sauce, sweet chili sauce and sesame oil to the bowl. Relaunch the P3 simmer program at 200°F for 10 minutes, scraping down the sides of the bowl after 5 minutes.

4. Use a slotted spoon to drain excess liquid. Serve in lettuce leaves with bean sprouts and cilantro leaves.
