Ingredients

  • 100 g butter
  • 200 g caster sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 2 pinches salt
  • 260 g flour
  • 1 tsp baking powder
  • 240 ml milk
  • Food colouring
  • 100 g melted white chocolate
  • 40 ml double cream
  • 200 g white chocolate
  • Multicolour sprinkles
  • Water
  • Lollipop sticks

Preparation

To make the cake pops: 1. Preheat the oven to 180°C. 2. Put the butter and caster sugar into the Mixing bowl with the Kneading/crushing blade attachment. Lock the lid with the cap and set it to Speed 8 for 2 minutes. Scrape down the sides to bring the mixture into the centre. 3. Add the vanilla extract and the eggs. Lock the lid without the cap and set on Speed 3 for 6 minutes. After 1 minute, gradually add the flour, yeast, salt and milk through the opening in the cap. 4. Divide the mixture into 5 bowls, adding a different colour to each bowl (purple, blue, yellow, orange and pink). 5. Pour the mixtures into a muffin tin and bake for 15 minutes. 6. Once baked, leave to cool then crumble each colour of cake into separate bowls. 7. Mix each one with a little cream and melted chocolate. 8. Make a little ball with each colour. 9. Place a ball of the mixture on a piece of cling film and press down to flatten it, then stack with the other colours to make a rainbow. 10. Roll it in the cling film until you have formed a ball. 11. Repeat until you have used all of the coloured cake. 12. Place the balls in the freezer for 15 minutes. 13. Pour 700 ml of water into the Mixing bowl. 14. Break up the white chocolate into the Baby bowl without an attachment. 15. Lock the lid and set at 65°C for 15 minutes.

To decorate the cake pops: 1. Dip the lollipop sticks into the chocolate then push them into the balls of cake. Refrigerate for 10 minutes. 2. Dip the cake balls in the chocolate until they are completely coated and top with sprinkles. Refrigerate for 10 minutes and enjoy.

Tip: You may use milk or dark chocolate instead of white Tip on melting the chocolate: If you do not have a baby bowl, melt the chocolate in the microwave or over the stove by putting the bowl of chocolate over a saucepan with simmering water
