Ingredients

  • 4 tbsp of olive oil
  • 1 medium eggplant, peeled and diced
  • 3 medium zucchini, diced
  • 1 medium onion, chopped
  • 2 red pepper, seeded and diced
  • 1 1/2 cups of tomato puree
  • salt and black pepper
  • 2 cloves of garlic, minced
  • 3 tbsp of chopped fresh basil
  • 2 tsp of dried Italian seasoning

Preparation

Prepare the ingredients.

Preheat pot. Add oil.

Brown eggplant and zucchini for 4 minutes. Add onions, peppers and garlic. Brown for 4 minutes.

Add tomato puree and Italian seasoning. Stir well to combine.

Cooking under pressure : 8 min.

Add basil. Season with salt and pepper to taste.
