Ingredients

  • 1 cup vegetable stock
  • 2 tbsp tamari
  • 1 tbsp dark soy
  • ¼ cup oyster sauce
  • 1 tbsp sesame oil
  • 3 tbsp Chinese cooking wine
  • Pinch of salt
  • 1 tbsp peanut/vegetable oil
  • 1 large knob of ginger, peeled and grated
  • 2 garlic cloves, minced
  • 500 grams minced pork
  • 2 spring onions, finely sliced
  • 1 small carrot, grated
  • 1 small zucchini, grated
  • 200 grams canned water chestnuts, chopped
  • 150 grams shiitake mushrooms, chopped
  • 2 tbsp corn flour
  • 8-10 large lettuce leaves
  • Crushed peanuts
  • Spring onions, chopped
  • Coriander, chopped

Preparation

#MealPrep San Choy Bau is a popular Chinese starter dish that is loved by many and is packed with flavour. Delicious pork filling served in lettuce cups is a great make ahead meal that you can easily make in double batches as it keeps well. Just store the lettuce cups and the filling separately and assemble it when you're ready to eat. Recipe by Tefal brand ambassador, Lorena Lys.

1. Select Manual on your Cook4me Touch and then select High Stir Fry. When bowl is hot, add the peanut oil. Brown the ginger, garlic and pork until pork changes to a whitish colour. Then add the vegetables and mix well. 2. In a mixing jug, whisk together the top 7 ingredients and pour mixture over the pork. Stir until well combined. Break apart the mince and spread evenly in the base of the bowl. 3. Now select, Pressure Cook, High Pressure Cook and set time to 10 minutes. 4. When cooking is complete, add the corn flour and mix through until sauce thickens. 5. Scoop mixture into lettuce cups and garnish with peanuts, onions and coriander. Option to serve with some hoisin sauce.

Tip: For a nice presentation, you can cut the iceberg lettuce into evenly round shapes with a large cookie cutter or simply trimming the lettuce cup with kitchen scissors or knife. The trimmings can then be chopped and added into the filling during cooking or made into salad.
