Ingredients

  • 6 chicken breasts
  • 1 organic lemon
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 2 tablespoons sweet soy sauce
  • 1 pinch Cayenne pepper
  • 1 pinch of salt
  • 100g smooth peanut butter
  • ½ bunch of fresh coriander
  • 20cl unsweetened coconut milk
  • 6 wooden skewers

Preparation

Cut the chicken breasts into bite-sized pieces and place them into a big bowl. Add the zest and juice of the lemon, the two peeled and crushed garlic cloves, the olive oil, soy sauce, Cayenne pepper and salt. Mix to coat evenly and let marinate for 1 hour in the fridge. Prepare the satay sauce : in a small saucepan, mix the finely chopped coriander, peanut butter, coconut milk and slowly heat the mix while stirring constantly until smooth and evenly combined.

Prepare the skewers with 5 to 6 chicken pieces on each wooden skewer.

Turn the grill on. Select the Poultry setting and press OK. Once the grill is hot, place the chicken skewers inside and let cook until the desired cooking level.

Serve the skewers with the warm sauce to dip.
