Ingredients

  • 50 g chopped bacon lardon
  • Olive oil for sauteing
  • 16 large mushrooms (stems removed and chopped)
  • 2 chopped brown shallots
  • 4 tbsp chopped parsley
  • Salt
  • Pepper
  • 6 tbsp cooked brown rice or quinoa
  • 150 g grated parmesan cheese (divided into two portions)

1. Brown the chopped bacon in some olive oil on high heat, then add the chopped mushroom stalks, the shallots, parsley, salt and pepper, and continue browning for another 3-4 mins. Remove from the heat and let cool.

2. Add rice/ quinoa and 1/2 of the grated cheese. Remove mixture from the frypan and set aside.

3. Stuff the mushrooms with mixture, and sprinkle with the rest of the cheese.

4. Place the stuffed mushrooms in the frypan and transfer to a preheated oven for 10-12 mins at 180°C until golden. Serve immediately.
