Prepare the ingredients.
Place the cous cous in a heat proof bowl. Pour the boiling water over the cous cous and leave to absorb.
Use a fork to seperate the grains. Stir in the feta, tomatoes, parsley and olives. Fill the pepper halves with the mixture.
Place the filled pepper halves into the steaming basket with 300ml of water in the bowl. Cover the peppers with foil.
Cooking time: 5 min.
Serve and enjoy!
