1. Peel the sweet potatoes and cut them into pieces. Cook them in a pan of boiling water for 10 to 15 minutes.
2. Drain them and then mash them up using a fork. If the mixture is too wet, place it back on the heat to soak up some of the liquid.
3. In the mixing bowl, mix the mashed sweet potato with the other ingredients. Mix until the batter has the same consistency as that of a thick pancake batter.
4. Grease the waffle maker and pour in the mixture. Cook for 3 to 4 minutes.
5. Serve with a sweet or savoury topping.
