Ingredients

  • 600 g Pork tenderloin, chopped into 3 cm cubes
  • 600 g Pumpkin, peeled and chopped into 2 cm cubes
  • 240 ml Coconut cream
  • 2/3 tsp Chilli powder
  • 2 tbsp Fresh ginger, finely sliced
  • 2 tbsp Nuoc mam sauce (Vietnamese dipping sauce)
  • 1 tbsp Mint, washed and chopped
  • 2 tbsp Curry powder
  • 2 tbsp Groundnut oil

Preparation

Pour the oil into the bowl.

Add the curry and the chilli. Brown the meat on all sides.

Add the coconut cream, ginger and chilli. Stir.

Cooking time: 9 minutes.

Add the nuoc mam and the mint.
